During the course, you will explore all the factors that influence taste and the experience of taste. You will gain an in-depth understanding of various product groups, preparation techniques and the interplay between food and drink.
You will explore all aspects of a flavour profile and build a broad foundation of product knowledge.
You’ll explore different cooking methods and sauces and discover the possibilities of vegetarian and vegan cuisine.
This day’s lesson is entirely devoted to products from fresh and salt water.
You will be introduced to different types of meat and learn about the characteristics and uses of game and poultry.
During a visit to Kaasfort Amsterdam, you can combine learning more about cheese with a wine tasting to complement it.
On the final day of the course, you’ll explore sweet dishes and bring together everything you’ve learnt to create a complete menu.
The SVH Gastronomy course is designed for ambitious and passionate professionals who wish to gain a deeper understanding of flavours, products and food and drink pairings.
The course is suitable for chefs, hosts and hostesses, sommeliers, wine experts and other professionals in the gastronomy and hospitality sectors, amongst others.
Once you have completed the full programme, you can sit the official SVH exam. The exam is not compulsory, but it gives you the opportunity to complete the course with the industry-recognised SVH Gastronomy diploma.
To be eligible to sit the exam, you must hold a qualification at level 3 or above. Acceptable evidence includes: SVH Wine 3, SVH Vinologist/Sommelier (or equivalent), an MBO level 3 qualification, a qualification as an Independent Chef, or a qualification as an Independent Host or Hostess.
Upon successful completion, you will receive the official SVH Gastronomy diploma.
Are you listed in the SVH Register of Vinologists/Sommeliers? If so, you will earn 6 PE points in Category A for each day of teaching.

The course consists of six intensive days of tuition, combining theory and practice. Under the guidance of tutor Edo Kruidering, you will explore, taste and compare different flavours, products and preparation methods. The lessons build on one another and culminate in a complete six-course menu featuring selected food and drink pairings.

SVH is an independent organisation and places great value on transparency and reliability. That’s why they have asked the Foundation Examination Board to provide external supervision of all SVH exams.
The Foundation Examination Board is an independent institution that supervises professional qualifying and/or function-oriented exams. The Examination Board has conducted various audits and found that the SVH exams meet the requirements.
This way we ensure that the quality of your SVH certificates and diplomas is additionally guaranteed.
Game learning, that’s learning through entertainment. By offering information and/or skills in game form, we make learning, discovering and experiencing fun. You stay motivated and the knowledge you gain sticks better and is available in your own time. The E-learning│Game Learning contains a unique learning method. The program is built on knowledge, insight and application. It can, therefore, be quite challenging to answer the questions. We do strongly recommend that you first go through the lessons thoroughly before answering the questions.
SVH, SDEN and WSET are not training courses but exam levels from three independent organisations. To obtain the right diploma, you must find a recognised trainer who meets your requirements. Because WSET is the largest organisation for wine education worldwide, it is often mistakenly seen as an internationally recognised training. In terms of content, the training lags behind SVH and SDEN, which both have industry recognition and international appeal.
Theoretical and experimental frameworks.
Theoretical and experimental frameworks apply to both SVH and SDEN exams. For SVH exams, a plus applies, meaning extra content on practical applicability. This additional content relates to everything a hospitality employee needs to know about giving good advice to guests and hobbyists at home about wine and food.
No, that’s not mandatory! But… a successful course/training or education should be crowned with a meaningful diploma, the irrefutable proof that you have a certain level of knowledge. Theoretical and experimental frameworks apply to both the SVH and SDEN exams. A plus applies to the SVH exams, which means extra content on practical applicability. This extra content relates to everything an employee in the hospitality industry needs to know within certain functions in order to be able to give good advice to the guest. But also the hobbyist at home, who wants to know more about wine and food.

Schedule and lesson days
If you wish to complete the qualification with an exam, you must hold a Level 3 diploma. Proof of this includes an SVH Wine 3 certificate, an SVH Sommelier diploma (or equivalent), an MBO diploma, or a qualification as a Professional Chef or Host/Hostess. If you do not wish to take the exam, a strong personal motivation will suffice.
SVH EXAM
Once the entire program has been completed, the course can be concluded with an official exam (optional). The exam is administered by the SVH, leading to an official, industry-recognised SVH Gastronomy diploma. This is the highest achievable qualification in the field.
